Sommelier Dennis Roman, a wine professional from Chile that initiated his hospitality journey and wine career whilst living in South America, currently based in Sydney and perhaps known around the traps as ‘El Mostacho’.

Upon his return to Australia in 2007, Dennis joined hospitality giant, the Merivale Group, becoming a key member of the wine team at fine diner ‘est. restaurant’. In years to follow he made his way across the groups diverse range of awarded venues, leading wine teams and overlooking several areas of the large scale wine program.  Fast forwarding that era, in 2013, he was summoned by Chef Pasi Petanen to join forces at the successful ‘pop up’ degustation restaurant ‘Cafe Paci’, to create the wine list and front the wine pairings throughout the entire duration.

Sommelier Dennis Roman has since created his wine company Senses At, with the aspiration to channel his knowledge and taste through a diverse range of wines and distillates together with the offering of services around these great products. The enthusiastic Sommelier continues to design wine lists and host training sessions for various hospitality venues, which allows him to execute one of his major loves of the trade, Wine Education.

In addition to this, at present Dennis can be spotted moonlighting in full swing with the wine team at the acclaimed Restaurant Hubert amongst other Sydney restaurants and events that keep him in touch with the realities of the floor.
